Alcea Rosea Farm Cheeses:
Made using the traditional French technique with a slow coagulation, this is a creamy and slightly tangy fresh goat cheese that is hand-molded into 8-ounce balls. Our fresh Chevre pairs perfectly with a light, Rose wine.
Fresh chevre, marinated in Olea Farm Extra Virgin Olive Oil, spices and organic herbs which are grown at the Alcea Rosea Farm. The marinade has hints of basil and thyme with garlic and pepper undertones. The fruity oil compliments the tanginess of the cheese. This is the perfect picnic snack.
This soft-ripened cheese is allowed to age from three to six weeks (the flavors become more pungent as the cheese ages). When young, the rind is billowy and supple. Once this wonderful cheese is cut, the cheese exudes from the rind. The texture varies from a velvety creaminess to a nougat spreadability and the pate is rich and buttery.
A delightful raw milk, washed curd cheese made in a similar style to Gouda cheese. After brining, this cheese is painted with a cream wax then dipped in a hard wax before it ages one year. The flavor is nutty with earthy undertones and hints of caramel, reminiscent of the California grassland on which the goats browse. This cheese is a soft, creamy white with a slightly crumbly texture under the knife yet has a smooth, silky mouth feel. It is an excellent reflection of terrior and farmstead cheese production.
